I have a 1978 KZ400 project that I rebuilr for my dad. It runs great as it is but has a sticky float that I can't seem to remedy and seems to be under-powered. I'm interested in getting these carbs to give it a little boost. I'm wondering what I would need for a full kit to make swapping them out as easy as possible?
We've been trying to acquire a KZ400 to design a complete kit for it (like we've done with several other models). But for the time being, we have been selling these carbs without the manifolds, filters or cables. We do know several bike builders have used these carbs on the KZ with great success. For now, you'd have to adapt these carbs to your existing manifold and to fabricate a throttle cable as well. We have a large selection of pod filters that could work with this bike. Just search "air filter" on our site and check out the dimensions.

Was wanting to change out the stock neihin cv carbs with some more reliable carbs... maybe with a bit more performance.... would this be the right selection? Are they jetted to work with stock airbox or to be used with pod filters? Is there a left and right version?
These would be a very good replacement for the stock CV carbs. Performance should significantly increase in available power as well as responsiveness. There is not a left and a right version available as the VM30 from Mikuni is only offered in one side. When it comes down to it, the only difference between a left and a right Mikuni, is the idle location. Everything else is the same. The carburetors are setup with intentions of running pod filters of some kind.

The picture of the product shows two right side chokes. Does the product ship with a left and ride side, or are they both the same side?
Mikuni does not offer left and right for the VM30 carbs. Only the VM32 and VM34 have a left/right option, but that is only for the idle screw. Everything else on the body is static. You cant get Mikuni carbs with a choke on the other side. For some customers, they prefer to install a knob style, pullup choke on the right side, and maintain the factory lever style choke on the left side of the bike. This improves access.

I have 75 KZ400, will these mount directly to the stock rubber boots to the engine or is there a replacement needed? Do they have a bracket connecting them together as one piece like the stock carbs or do they remain unattached to each other? Essentially, if I were to purchase these, are there any other parts I would need to purchase or modifications of any kind that I would need to perform to install them successfully?
I do not believe these carbs will mount directly to the stock manifolds. The VM32 has a spigot outside diameter (OD) of 40mm. The best way for you to know if these will fit is to measure the OD of the manifold spigot on your stock carburetor. There are a number of flange manifold adapters available and you might be able to find one with the the correct bolt hole spacing. I have provided links below to some on our web site:

These carbs are not linked and that is an advantage because it makes turning of the carbs much more simple. When starting the bike, typically you will only need to choke one of the Mikunis for the bike to start.
You will need to adapt your own throttle cable. You can either use a 2-into-1 junction block or a dual throttle, running individual cables to each carb. But if you do that, you would have to abandon the stock throttle assembly.

I wanted to know if they were jetted or could be jetted, in the interest of abandoning the stock airbox in place of pods. However if these carbs are still jetted for stock, I'm going to probably pass on them. Bringing my grandfather's 1976 kz400 back to life as well.
They are pre-jetted specifically for the KZ400, with intent of using pod filters. If performance is not of too much interest, you might try rebuilding the original carburetors. Rebuilding would be less expensive, and possibly an easier method to get the bike back on the road, depending on overall condition.
